RECIPE & PAIRING: Harissa aubergine boats with quinoa, sun-dried tomatoes, parsley and 47 AD organic Prosecco

These spiced roasted aubergine halves are topped with a quinoa, sun-dried tomato and parsley salad to make a tasty and healthy light lunch or dinner.

  • 2 large aubergines
  • 2 tbsp virgin olive oil
  • 1 heaped teaspoon harissa
  • 100g quinoa
  • 30g raisins or sultanas
  • 30 flaked almonds
  • Handful fresh parsley, finely chopped
  • 2 large sundried tomatoes, chopped
  • Juice of 1/2 lemon
  • 4 tbsp natural or plant-based yoghurt (optional)

Prosecco Frizzante - 47 AD

This luscious organic prosecco combines soft apple, peach and grapefruit flavours with crisp citrus in a delicate bubbly, 'frizzante' style. It's a great match for this harissa aubergine and quinoa dish - light, delicate and refreshing all round.


  1. Preheat the oven to 180C and line a baking sheet with foil or greaseproof paper.
  2. Halve the aubergines lengthways and use a knife to score a criss-cross pattern into the flesh, being careful not to cut through the skin. Lay them on the prepared baking sheet, skin side down.
  3. Mix the harissa with the olive oil in a small bowl and brush evenly over the aubergines. Roast them in the oven for 20-25 minutes until softened all the way through.
  4. Put the raisins in a small bowl and cover with boiling water and set aside.
  5. Meanwhile, put the quinoa in a small saucepan with 200ml water and bring to the boil, then simmer for 15 minutes until the quinoa is cooked and fluffy. Drain any remaining water through a sieve and transfer the quinoa to a bowl.
  6. Drain the raisins and mix them into the quinoa along with the flaked almonds, parsley, sun-dried tomatoes, lemon juice, salt and pepper.
  7. When the aubergines are cooked, remove them from the oven and serve topped with the quinoa salad, a spoonful of natural yoghurt and a chilled glass of 47 AD Prosecco Frizzante.
