RECIPE & PAIRING: Fugazza pizza (cheese and onion, no tomato) with Lucky's Pinot Grigio

This is my take on a classic Argentinian pizza which is made with caramelised onions and cheddar cheese on a no-tomato whole flour base


For the base:
  • 100g wholewheat flour
  • 100g plain flour
  • 100ml water
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon salt
For the topping:
  • 3 medium-sized white onions
  • 2 tablespoons extra virgin olive oil
  • 50g grated cheddar cheese
  • 1 teaspoon oregano (dried or fresh)

Lucky's Pinot Grigio

This crisp and refreshing Pinot Grigio is the perfect match for a Fugazetta pizza. Fresh citrus and apple flavours complement the cheese, balanced by a touch of tropical fruit, a good companion for the caramelised onions. Simple but delicious flavours work well together without overpowering each other.


  1. To make the pizza base sift the flour into a large mixing bowl and stir in the salt. Add the oil and water and use your hands to work the ingredients together to form a moist dough. Set aside (preferably in a warm place) whilst you prepare the topping
  2. Peel and cut the onions into thin rings. Heat the oil in a large frying pan and add sliced onions. Cook them over a low heat for around 20-30 minutes until they have softened and are lightly browned
  3. Preheat the oven to 200C and lightly brush and oven tray with olive oil.
  4. Lightly dust a clean work surface with flour and tip the pizza base out onto it. Use your fingers to gently push the dough into a thin round shape and then carefully transfer to the oiled tray
  5. Bake the pizza base in the oven for 5 minutes and grate the cheese in the meantime. Remove the tray from the oven and top it with the softened onions and grated cheddar, then return it to the oven for a further 15 minutes until golden
  6. Serve sprinkled with dried or fresh oregano

Recipe notes:

  • You can use 200g plain flour if you don't have wholewheat flour
  • This recipe can be used to make one large pizza or two mini pizzas
